It's easy and tasty, and it incorporates healthy spinach, which the kids have no problem eating this way!
16 oz.Beef,Ground,5%
1 1/2 cupPasta, Dry
1 cupOnions
1 tspOregano leaves, dried
1 tspThyme leaves, dried
1 tspBasil leaves, dried
1 can (14.2 oz)Tomatoes,Diced
2 cupsTomato Sauce
2 cupsSpinach, Fresh
1 cupCheese Ricotta,Part Skim Milk
Directions
Chop onion. Chop spinach into small pieces either with food processor or by hand.
Put a large pot of water on high heat to boil for pasta. When boiling, cook pasta according to package directions
Meanwhile, brown the ground beef in a large skillet. Drain and rinse beef with hot water in a colander (this removes more fat). Return beef to skillet.
Add chopped onion, oregano, thyme, and basil to meat and saute for 3 minutes over medium high heat.
Add tomatoes, tomato sauce and chopped spinach to meat mixture. Mix thoroughly and heat until bubbling. Reduce heat and simmer until pasta is cooked.
Drain cooked pasta. Mix pasta and sauce together (you can do this in either the skillet or the pasta pot, depending on which is bigger). Add ricotta or cottage cheese; stir over medium heat until the entire dish is heated through.
