Chicken Parmesan

There really isn't anything better than a fast and delicious meal. Italian always tastes great and is easy to make.
  • 2 unit (about 71grams each)Chicken Breast, Skinless
  • 1/2 cupBread Crumbs, Seasoned
  • 1 1/2 tspPepper,Black
  • 1/4 cupEgg (cup)
  • 1/3 cupCorn Flour ,Enriched
  • 1 tbspVegetable Oil,Canola
  • 1 ozCheese Mozzarella,Part Skim Milk
  • 1/4 cupCheese Parmesan,Grated
  • 1 tspItalian Seasoning

Directions

  1. Halve chicken breasts and tenderize. Mix bread crumbs, parmesan cheese, seasoning, and pepper. Break eggs and separate the whites. Mix the whites with a whisk till frothy. Put flour in a shallow bowl.
  2. Dip chicken in the flour then in egg mix and then in the bread crumbs. Repeat to each piece of chicken.
  3. Warm oil in pan on medium-heat. When ready cook chicken on each side 5 minutes or until cooked all the way through. Sprinkle mozzarella over the top and cover till melted. Serve with your choice of pasta.
