There really isn't anything better than a fast and delicious meal. Italian always tastes great and is easy to make.
2 unit (about 71grams each)Chicken Breast, Skinless
1/2 cupBread Crumbs, Seasoned
1 1/2 tspPepper,Black
1/4 cupEgg (cup)
1/3 cupCorn Flour ,Enriched
1 tbspVegetable Oil,Canola
1 ozCheese Mozzarella,Part Skim Milk
1/4 cupCheese Parmesan,Grated
1 tspItalian Seasoning
Directions
Halve chicken breasts and tenderize. Mix bread crumbs, parmesan cheese, seasoning, and pepper. Break eggs and separate the whites. Mix the whites with a whisk till frothy. Put flour in a shallow bowl.
Dip chicken in the flour then in egg mix and then in the bread crumbs. Repeat to each piece of chicken.
Warm oil in pan on medium-heat. When ready cook chicken on each side 5 minutes or until cooked all the way through. Sprinkle mozzarella over the top and cover till melted. Serve with your choice of pasta.
